Verdad’s chefs Heydi and Elena prepare all of our delicious, freshly made meals with local ingredients and love in our on-site kitchen. Imagine just caught whole fish and ceviche, freshly picked greens, delicious fruit smoothies, house-made granola, and brick-oven pizza made with homemade fresh mozzarella.
Our cooking is ocean & farm to table, utilizing the freshest, quality ingredients from the soil and shores of Nicaragua. All of our seafood is locally caught; our dairy products, such as eggs and homemade yogurt, are locally sourced and what we don’t grow here in our garden, we get at the local farmer’s market, enabling us to support our neighbors in numerous ways.
Our meals, served in our screened dining area overlooking the ocean or poolside are always a highlight of the Verdad experience, when you get the chance to share family-style meals with other Verdad guests.
Early evenings most Fridays, join us for a magical sunset when we host drinks and tapas at our pool honor bar, which stays open with serve yourself drinks and snacks 24 hours-a-day. Fresh local fruit, juices and coffee are available throughout the day too.
We cater to all dietary preferences and needs, be it vegetarian, vegan, gluten-free, paleo or something else, so that every guest can indulge in the scrumptious flavors of Cocina Verdad.

Dinner - $17
Rancho Tortuga is a low-key, beachfront restaurant on Playa Escameca, serving simple, absolutely delicious local fare, smoothies and ice-cold drinks where you can wiggle your toes in the sand while you enjoy your meal. It’s open for lunch only and is a short walk from our hotel, but we’re happy to run you down in our 4x4 if you prefer.
